In terms of the Snape protecting the trio I think it takes place when the Dementors come to get Sirius. In the book Snape was "out cold" when this happened and then awoke to the aftermath. Harry and Hermoine, when they had gone back in time, saw him levetate everyone to the hosptial ward (after he awoke).
However, in one of the POA reviews it is mentioned that when the Dementors attack Snape attempts to protect everyone (probably not Sirius though) but fails and it is up to Harry to "save the day". Therefore, it is probably a new scene. I imagine that it plays out with the trio, Sirius and Lupin escorting a bound Wormtail and unconscious Snape back to Hogwarts. Lupin begins to change, Wormtail scatters, Sirius pursues Lupin all the while the Dementors are closing in. Snape attempts to stop the Dementors and does something wrong; Harry then steps in to stop them.
Personally, I don't like moving too far from the integrity of the book, but I do think that a scene like that would be good, expecially for those who haven't read any of the "Harry Potter" books. Those that have read the books understand Snape's persona and "where he is coming from"; if you haven't read the books then Snape comes across as just a stuffy, grumpy wizard with a really bad attitude. Showing him protecting the trio kind of puts him that "grey" area that the book alludes to.
Just a thought. Who knows, the entire scene could just be Snape making up a story as to what happened with the Dementors in order to make himself look better. At the end of POA it is mentioned that he is up for the "Order of Merlin" award, "First Class", but I think that was for Sirius' apprehension and not for anything to do with the Dementors.
